Bloom is a 30-second pre-infusion step at the start of a brew. Pour a small amount of hot water over the grounds, let them sit, and watch the bed swell and release gas. Then brew normally. The result is more even extraction and a cleaner cup. Skipping it costs nothing in time but gives up consistency, especially with fresh beans.
What happens during bloom
Coffee releases CO2 from the moment it is roasted. The gas stays trapped in the bean’s cell structure and keeps releasing for days and weeks. When you grind and pour hot water over the grounds, CO2 escapes fast. That gas pushes back against the water and disrupts even saturation. Some areas of the coffee bed wet fully; others stay dry. The extraction is uneven.
Blooming gives the CO2 somewhere to go first. The brief pour saturates the grounds and triggers rapid outgassing. The bed swells, visibly, sometimes dramatically with very fresh beans. After 30 seconds the gas has largely escaped. The main pour then saturates the grounds evenly and extraction runs cleanly from the start.
How to bloom
The ratio is 2:1 water to coffee by weight. For 20 g of coffee, use 40 ml of water. For 30 g, use 60 ml.
- Start the timer.
- Pour the bloom water in a slow spiral to wet all the grounds evenly. Use just enough to saturate everything without water dripping through.
- Let it sit for 30 to 45 seconds. Do not stir.
- Continue with the main pour.
The bloom water counts as part of your total brew water. If your recipe calls for 300 ml total and you use 40 ml for bloom, pour 260 ml in the main phase.
What the bloom looks like
Fresh beans produce a visible dome or crust that rises above the filter and releases small bubbles. The more CO2 in the bean, the bigger the bloom. Beans 5 to 21 days off roast bloom noticeably. By 4 to 6 weeks most of the CO2 has escaped and the bloom is much flatter. No visible bloom means the beans are old.

Which brew methods need it most
Pour-over benefits most. Methods like the Hario V60 and Chemex depend on even, controlled saturation. Skip the bloom and you get channeling through the dry spots, sourness in parts of the cup, and wasted potential from the bean.
French press benefits too, though less critically, because the immersion method saturates grounds more fully than a pour-over does. A 30-second stir and rest before adding the lid does the same job. The full process is in our French press brewing guide.
Espresso does not need a manual bloom. The machine’s pre-infusion function handles it, wetting the puck at low pressure before the main extraction begins. Most modern home machines include pre-infusion as an automatic function or adjustable setting.
Drip machines do not allow a bloom step unless the machine includes a dedicated bloom mode. A small number of higher-end home drip brewers include this. Most do not.
Does bloom improve the flavor?
Yes. Even extraction produces a more balanced cup. The sweet and bright compounds extract alongside each other instead of the fast-extracting acids racing ahead while slower-dissolving sweetness lags behind. The result is a cleaner cup with better separation of flavor notes.
The difference is most obvious with fresh single-origin beans where origin character is the point. It is less obvious with a dark espresso blend where roast flavor dominates regardless of extraction evenness.
