What Caramel and Sweet Notes in Coffee Are
The caramel family — caramel, brown sugar, toffee, molasses — comes from sugar caramelization during roasting. As beans hit 375–420°F, sucrose breaks down and reforms as hundreds of new flavor compounds: diacetyl (buttery caramel), furanones (caramel sweetness), pyranones (toffee depth). These are the same reactions that turn white sugar into caramel on a stovetop.
