The Toddy Cold Brew System is 60 years old and still the clearest way to make cold brew concentrate at home. The design is a plastic steep container, a felt filter, a rubber stopper, and a glass decanter. Combine coarse coffee and cold water, wait 12 to 24 hours, pull the stopper, and the concentrate drains through the felt filter into the glass below. Refrigerate and dilute to serve. No electricity, no moving parts, and the concentrate holds for two weeks.
Cold brew concentrate extracts coffee with cold water over a long period rather than hot water over a short one. The cold extraction produces a cup with significantly less acid than hot brewing: the high-temperature chemical reactions that create the brightest acids in coffee do not occur at cold temperatures. The result is smooth, low-acid, and naturally sweet compared to the same beans brewed hot. Diluting the concentrate to 1:1 with water produces a standard-strength cold coffee. Pouring it over ice with milk produces an iced latte without espresso equipment.
The Toddy’s felt filter is the quality feature. It removes fine sediment and coffee fines completely, producing a concentrate as clear as commercial cold brew products. Other cold brew systems using metal mesh filters leave sediment in the concentrate that settles at the bottom of the decanter and clouds the final drink. The felt filter adds a few minutes of drain time but produces a cleaner result.
A single batch uses 12 oz of coarse coffee and 9 cups of cold water and produces approximately 48 oz of concentrate. At a 1:1 dilution ratio that is 96 oz of finished cold brew, or roughly 8 to 10 serving-size glasses. At current specialty coffee bean prices that batch costs $4 to $7 in coffee. A comparable 48-oz cold brew bottle retails for $10 to $14 at most grocery stores. Coarse grind is the only technique requirement. Fine or medium grinds clog the felt filter and extend drain time from 20 minutes to several hours. The same coarse setting used for French press works. A burr grinder is necessary here: blade-ground coffee produces uneven particles, including a fine fraction that blocks the filter regardless of the setting dial. After steeping, pull the rubber stopper over a sink first, not over the decanter, to let the first few drops clear any loose fine particles near the stopper opening.
The glass decanter with its airtight lid stores concentrate up to two weeks without notable flavor degradation. Glass performs better than plastic for cold brew storage because it does not absorb or off-gas. The concentrate stays fresh longer in glass than in any plastic container at the same temperature.
