What causes a dark cherry flavor in coffee?

Natural processing. When the coffee cherry is left on the bean to dry, its sugars ferment into the bean and create deep, sweet, dark-fruit compounds. The roast then concentrates them. It is why natural-process coffees so often read with cherry and berry depth.

Can dark cherry survive a medium or dark roast?

Yes, better than most fruit notes. Because natural processing drives the fruit deep into the bean, dark cherry holds up further into the roast than delicate berry or stone fruit, which burn off quickly. That is why it can appear even in bolder cups.
