What is a dried fruit note in coffee?

Raisin, prune, or dark berry character, deeper and sweeter than fresh fruit. It shows up in medium-dark roasts where fruit-leaning beans are taken far enough for the fruit to concentrate and the sugars to caramelize. It often rides with bittersweet chocolate.

Why does dried fruit appear in darker roasts when most fruit notes disappear?

Because the darker roast concentrates rather than preserves. Bright, delicate fruit burns off, but the residual fruit character deepens into its dried, raisin-like form as sugars caramelize. So the fruit you taste in a dark espresso reads dried, not fresh.
