What causes a smoky flavor in coffee?

Dark roasting. When the roast pushes past caramelization into controlled carbonization, it builds a warm, campfire-like smoke note. It is a roast characteristic, not an origin one, which is why French roast and other very dark coffees taste smoky regardless of where the beans came from.

Is smoky coffee burnt?

Not necessarily. Controlled smoke is a warm, intentional note from a well-managed dark roast. Burnt is the failure mode: flat, ashy, and bitter from a roast taken too far. The difference is whether the cup has warmth and depth or just harshness.
