Why does some Ethiopian coffee taste like strawberry?

High-altitude growing builds intense fruit esters, and natural or winey processing amplifies the berry character during drying. A light roast preserves it. The result is a real chemical resemblance to strawberry, not added flavoring. It is one of the signature notes of Ethiopian coffee.

Is strawberry coffee a flavored coffee?

Not when it is a single-origin Ethiopian. The strawberry note there is genuine origin and process character with nothing added. There are separately flavored strawberry coffees on the market, but a natural-process light-roast Ethiopian gets the note from chemistry alone.
