Dark roast reaches 455–475°F, well into second crack. Sugars carbonize — the sweetness tips from caramel toward charred and bitter. Acids break down almost entirely. Body is maximum. Bitterness is prominent. Origin character disappears; what you taste is primarily the roast itself.

Does dark roast have more caffeine than light roast?
No. Caffeine is relatively stable up to dark roast temperatures. By weight, light roast has slightly more caffeine — the bean is denser before oils evaporate and carbon forms. By volume, dark roast beans are lighter and more porous — you get more beans per scoop, so more caffeine per scoop. The difference is negligible for most purposes.
Why does some dark roast taste burnt vs. rich?
Roast speed and temperature control. Fast, high-temperature roasting at dark levels produces char and harsh bitterness. Slow, controlled dark roasting develops dark chocolate and molasses notes without the char. The difference is the roaster's craft, not dark roast itself.
