French press is the home base. Heavy body and thick oil extraction fill the cup in a way that filter methods do not preserve. The bitterness arrives on the swallow and stays: dark cocoa powder and pipe tobacco, dense and dry, extending through the finish. Cold brew is the second strong argument for this roast. Overnight extraction attenuates the bitterness without stripping the body, and the molasses depth reads more clearly cold than hot. Drip works, though water temperature needs to stay closer to 195°F; above that, the bitterness overtakes the rest of the cup.

Understanding what a French roast does to a bean clarifies what this blend offers. At this roast intensity, the Maillard reaction has run long and pyrolysis is in play: origin sugars convert to caramel and carbon, delicate organic acids are driven off. The molasses and tobacco notes you taste are roast-derived. The washed sourcing matters even at this extreme. A natural-process dark roast carries a fermented-fruit layer underneath the bitterness. This one does not: the bitterness arrives without that competing sweetness underneath.
