Light vs Medium vs Dark Roast Coffee: What the Difference Actually Means

Roast level is the most visible label on a coffee bag and one of the least understood. Here is what light, medium, and dark actually mean for flavor, caffeine, and brew.

Roast level is the most visible label on a coffee bag and one of the least understood. Light, medium, and dark do not just describe color. They describe where on the roast curve the roaster stopped, and how that decision changed the bean’s chemistry, flavor, and character in the cup.

What roasting actually does

Green coffee beans are dense, grassy, and undrinkable. Heat drives two key reactions: the Maillard reaction (the same browning that happens when you sear meat) and caramelization of the bean’s natural sugars. These reactions build the hundreds of flavor compounds in roasted coffee. The longer and hotter the roast, the more the bean’s original character is replaced by roasted character.

Roasters use internal bean temperature to mark roast stages:

First crack happens around 401°F when moisture and CO2 inside the bean rupture the cell walls. This is the minimum for a drinkable roast. Second crack happens around 446°F when the bean’s structure breaks down further. Most specialty roasters stop between these two points.

Light roast

Light roasts preserve the most of the bean’s original character. Origin flavors come through clearly: the floral, citrus, and stone-fruit notes in an Ethiopian come from the bean, not the roast. Acidity is high. Body is thin. The cup is complex but unforgiving in brew.

Light roasts need hotter water (200°F to 205°F) and finer grinds than dark roasts to extract fully. Under-extract a light roast and you get all the acidity with none of the sweetness. A well-extracted light roast in a pour-over is exceptional. The same bean in a home drip machine often comes out flat or sour because most drip machines brew below 195°F.

Medium roast

Medium roast is the most forgiving. The origin character is still present but the roast adds sweetness and rounds the sharp edges of high acidity. Caramel and chocolate notes develop. Body increases. The cup works across more brew methods than a light roast does.

Most blends designed for espresso are medium roasts. The sweetness and balance suit milk drinks. A medium roast that pulls well on a home machine is more useful day to day than a light roast that needs precise brewing to show well. The Lavazza Super Crema is a medium blend built for exactly this.

Dark roast

Dark roasts sacrifice origin flavor for roast flavor. The terroir of the bean disappears and is replaced by smoky, bitter, dark chocolate, and woody notes. Body is full and heavy. Acidity is low. The bean loses up to 20% of its mass in the roaster, so dark roasts cost more to produce per cup despite often being cheaper at retail.

Dark roasts are less forgiving of over-extraction because bitter compounds are already present from the roast itself. Brew them with slightly cooler water (195°F to 198°F) and a coarser grind than you would use for medium. Does roast level change caffeine?

By a small amount, and the direction depends on how you measure. By weight, light roasts have slightly more caffeine per gram: dark roasting drives off some caffeine and the beans lose mass, so more beans go into each gram you grind. By volume (scoops), dark roasts have slightly more per scoop because the beans are lighter and more fit in the same scoop. The difference is negligible. Roast level is not a useful way to choose a caffeine level.
