What does a walnut note taste like in coffee?

Dry and slightly bitter, with a faint astringent edge. It is the more serious end of the nutty family, the opposite of soft, sweet hazelnut. It shows up at medium-dark roast levels, often next to dark chocolate.

Why is walnut more bitter than hazelnut in coffee?

Roast development. Walnut appears when browning is pushed a step past the sweet hazelnut range, so the toasted compounds gain a drier, more tannic character. Same family, deeper roast, more bitterness.
